  2. Gotta respect the honesty and humbleness. Took me damn near 2 years to get my brisket where I like it to be and I STILLLLL don’t like the way they turn out sometimes.

    Reminds me of the first time I ever made one. Had a point in the freezer and a brand new pellet smoker. I covered it in salt and pepper and put it on at 225. I knew nothing about smoking, and when I temped it at 165 I figured it was finished. Burgers and steaks are done at that temp, so why shouldn’t a brisket also be done?

    The outside tasted good and there was even a little bit of bark. But once I went for the meat, it was like overcooked nroast beef.
